Why lyophilization matters

Lyophilization — freeze-drying — removes water from a peptide preparation under vacuum at low temperature, leaving a dry, stable cake or powder. Because water drives most degradation reactions (hydrolysis, oxidation pathways, microbial growth), removing it makes peptides far more shelf-stable than they would be in solution.
